What is a good side dish for Chicken Bruschetta?
Well, I would need to know if you are making the chicken bruschetta appetizer which is served on bread or if you are making the chicken bruschetta bake which you make with a sauce and serve over pasta. If you are making it for dinner, I am guessing you are making the bake version which is served over pasta. So, since it comes with pasta, you wouldn’t want any other starchy side dishes including pasta, potatoes, rice, acini, couscous etc. So, I would go for a mainly vegetable side dish like french green beans cooked with onion and bacon, steamed broccoli or cauliflower, grilled summer vegetables like zucchini, squash, and scallions, or an arugula, walnut, and shallot salad with red wine/raspberry vinaigrette.
