What is a healthy easy chicken and rice recipe?
Chicken and rice Casserole 1 pound boneless chicken breasts (or pork chops) 1 can beef or chicken gravy 1 can beef or chick stock/broth 1 large onion sliced 1 bell pepper sliced (optional) 1 tomato sliced (optional) 1 can sliced mushrooms 2 cups water 1 cup uncooked rice 1 large baking dish sprayed with Pam Salt & pepper Preheat oven to 375 Season meat and lightly brown in a pan Take prepared pan and spread out the uncooked rice When meat is brown place on top of rice Pour over gravy and broth Add onions, bell pepper and tomato slices over each piece of meat and then pour over the water Cover with foil and bake for 35 minutes. Remove foil and bake another 5-10 minutes or until most of the liquid is absorbed or cook less if you want juicer rice.
