I’m betting this isn’t the recipe you’re anticipating. Still, it was the best thing I’ve ever made in my slow cooker. Goat cheese caramel (a.k.a. Dulce de Leche Cajeta) is unbelievably stunning when made in a slow cooker. Here’s how I’ve done it: • 1-quart goat milk. If you can find unpasteurized full-fat, all the better. If you can’t find unpasteurized, then still try to find full-fat. • 2-cups sugar • 1-whole vanilla bean, split open, seeds scraped (seeds and pod will go in cooker) • 1-teaspoon baking soda Put all the ingredients in the slow cooker. Cook on high for 12-hours. Uncover and continue to cook on high, scraping down sides, until it has greatly reduced and is caramel colored and caramel consistency. Remove vanilla bean pod. Serve over ice cream, or use as nearly any dessert sauce. You can keep this in the fridge (as long as it is covered) for at least a month. The total cooking time might be 15-18 hours, so this obviously isn’t a “leave for work, come home, and it’s ready”
