Stewing hens are a tradition that has gone by the wayside in most households. Stewing Chickens are birds that were bred to be layers that are now too old for laying eggs or they are roosters we have raised on pasture. These birds are older in age than our broilers and not bred specifically for meat production. Slow cooking stewing hens yields a modest amount of firm dark meat and they make phenomenal soups and stews. The broth from these birds is flavorful and dark.
