They should be cooked over high heat just until the water begins to boil then removed and left to stand until done. Never leave your eggs to boil! If eggs are boiled for any length of time, the yolks will become hard or may turn an unattractive greenish-gray. Simply put the eggs in a pan roomy enough to hold them without crowding, with cold water to cover by at least one inch. Next, over high heat, heat the water and eggs until just fully boiling. Once a full boil is achieved, remove the saucepan from the heat, cover tightly and let them stand for 15 minutes. After which, remove the hot water and run them under cold water for 5 minutes to stop the cooking process. At this point, put them in the refrigerator to cool for a couple hours. Deviled Eggs Recipe Ingredients 1 dozen eggs, 2 teaspoons dijon mustard, 1/3 cup mayonnaise, 1 Tbsp minced onion or shallot, 1/4 teaspoon tabasco, Salt and pepper, Paprika 1 Hard boil the eggs. Let sit covered for 12-15 minutes. Drain hot water from pan and run cold water over the eggs. (At this point if you crack the egg shells while the eggs are cooling, it will make it easier to peel the shells.) Let sit in the cool water a few minutes, changing the water if necessary to keep it cool. 2 Peel the eggs. Using a sharp knife, slice each egg in half, lengthwise. Gently remove the yolk halves and place in a small mixing bowl. Arrange the egg white halves on a serving platter. 3 Using a fork, mash up the yolks and add mustard, mayonnaise, onion, tabasco, and a sprinkling of salt and pepper. Deviled eggs should combine a salty flavor with a little bit of a kick from something spicy. It is important to cook your eggs properly and make sure that you don’t have dark yolks. Here is my favorite recipe for deviled eggs:

  • 6 eggs, hard boiled, cooled, and peeled
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white wine vinegar
  • 1 teaspoon finely chopped chives
  • Hot pepper sauce or 1 teaspoon of cayenne pepper
  • Paprika to sprinkle at the end for color
  • Salt and pepper
  • 1 teaspoon chopped canned jalapeno peppers (leave out if your guests are sensitive to spicy foods)

Directions

  1. Cut hard-boiled eggs in half and remove the egg yolks.
  2. Using a fork, mix together the mayo, mustard, vinegar, chives, and salt and pepper with the yolks into a paste. Taste to make sure it is seasoned correctly.
  3. Add jalapenos and hot sauce/cayenne pepper.
  4. Put the filling in a ziplock bag, work all of the ingredients to one of the corners, and cut a bit of the corner off for easy filling.
  5. Fill the egg halves with the mixture.
  6. Sprinkle with paprika for a beautiful color.
