What is chicken shawarma?
It is a pita sandwich with chicken as a main ingredient and is popular in the the Middle East, northern Africa, and parts of southern Asia. The chicken is previously cooked in a marinade of yogurt, malt vinegar, spices (including allspice, black pepper, cinnamon, cloves, nutmeg, fenugreek, ginger, and cardamon), and olive oil. Some recipes also include tahini and/or lemon juice in the marinade.
A chicken shawarma is an Arabic sandwich-like wrap composed of shavings of grilled chicken pieces. Strips of fat and pieces of seasoned chicken are skewered alternately on a stick and the meat gets roasted as the stick rotates near a flame. The meat is then shaved off the stack and made into a sandwich wrap with Arabic bread called kuboos. It is usually served with tahini, french fries and pickled vegetables.
