What is Pan de Noche or Panocha BREAD in Mexican or Central American cooking?
I’m trying to track down a more common name for a bread a friend wants so I could surprise him- it could be from Guatamala or Mexico -he spent years in both. He uses lots of slang, so it is likely a very local name. Here is the quote: “moist sort of bread traditionally served at night (though it is just as good at any time of the day), Pan de Noche – or simply, Panocha. Often used to make sausage sandwhiches” Pan de Campo or Panocha Bread, a trail bread http://www.hungrybrowser.com/phaedrus/m0214M05.
