If you can imagine mozzarella with a fuller flavor, then you’ve imagined Provolone. An Italian-style cheese originating in Southern Italy, Organic Valley cheesemakers craft our Provolone from the best ingredient available: organic milk from cows pastured on our family farms. Our Provolone is pale yellow, with a firm texture and flavor that is buttery with a slight snap. Producers use different cultures to make Provolone than Mozzarella, resulting in a fuller flavor and better aging ability. As in the making of Mozzarella, the curd is treated with extremely hot water and kneaded to stretch the casein matrix. Provolone is more easily sliced than Mozzarella, and adds extra zing to sandwiches and zip to pizza and other Italian dishes. It is excellent mixed with other Italian cheeses. Top bruschetta with shredded Provolone and bake until golden brown. Add diced tomatoes, pine nuts and minced scallions. Use a Mozzarella and Provolone blend on pizza, chicken parmigian, lasagna and casseroles.
