What is the best way to make fresh salmon fillets?
I’ll share this simple gourmet recipe with you if my husband doesn’t KILL ME for giving away his “secret”. Buy fresh salmon fillets with a nice pinkish-orange color to them. The meat should be firm and not separating from the center (this is a sign of OLD, yucky fish–don’t buy it). If you have a Costco in your area, they usually have nice fish or get it from a fish market. 1. Rinse fillets and pat dry with a paper towel. Cut them on the bias (diagonally) in about 1-inch wide strips. Get all your other dinner items prepared before you start cooking the salmon because it only takes a few minutes to cook. Tip: We like asparagus with Hollidaise sauce and/or a salad as a side dish with most fish. French bread is also great. 2. Sprinkle top and bottom of each fillet with Kosher (coarse) Salt, fresh ground pepper and dried rosemary. 3. Pour 1 cup olive oil or vegetable oil (NOT butter, margarine or shortening) into a large, unheated skillet. Non-stick or cast iron skillets are best. Turn hea
