Clams are delicate. The meat tends to get tough (like lobster) if overcooked. Also larger clams are in my opinion too chewy if steamed. The best steamers are small clams. To steam them, put a steamer basket or a plate turned upside down in the bottom of a large pot. You are building a platform to keep the clams from touching the water. Add water to the bottom of the pan, be sure that the clams will be above the water line. I like to get the water boiling, then add the clams and tightly close the pot. Steam 5 to 10 minutes. The clams should partially open, or be very easy to open by hand. Now serve and enjoy. Clams can be grilled too. The way I like to do it is to put the entire clam on the grill, and cook for about 10 minutes. You end up with each clam cooked in its own juice. Attempting to grill the meat directly is not a great idea. Hope this helps!
