Q What is the closest dairy-free product to cream? I need something to use in main course meals in place of cream. Is soft tofu any good and how do you prepare it? Once made, what are the storage requirements? A I have been in touch with a friend who is a great vegan cook. She has advised the following about a cream substitute in main meals: “If there is a requirement for cream in a recipe I either use the Tofutti Sour Cream or even the Blue Lotus Sour Cream (this one is much more like cream). Blue Lotus even have a “cream” but it’s way sweet! You can use silken tofu blended with a little soy milk & lemon juice – this works too.” Toffuti Sour Cream (from the US) can be hard to get but refer to our Great Places to Shop page for some outlets.
