What is the difference between 18/10 stainless steel and tin lining interior?
18/10 grade stainless steel is a high grade cooking stainless steel. Tin lining is a different metal bonded to the copper pot or pans cooking surface. The tin lined surface will not give a burn ring above the moisture line of a sauce or gravy in the pot like SS will. The SS lining will continue to heat up above the liquid line and the tin lined pan will have the same temperature throughout all of the inside of the pan.
