The difference between red and rose is that for rose wines, the skin is left to ferment with juice for a few days up to maybe 5. For red wines, skin is left for several weeks to a few months. The color leeches from the skin to the juice during fermentation. White Zinfandel is a rose. Just trying to keep it simple and basic. PS, for the headaches, some have suggested it comes from the tannins. White wines basically have no tannins to speak of. Rose have very little. Reds can be intense with tannins.
