Besides the price difference, the other difference between bread flour and all purpose flour is that bread flour contains more gluten, which helps ‘hold’ the bread together. All purpose flour is also a little flatter and softer than bread flour. I purchase gluten from the health food store, and I use it with all purpose flour, about 1 tablespoon gluten to each cup of flour. Gluten added to wheat flour also gives you a more firm loaf.
