Butcher paper is the standard coated brown paper that rural butcher shops generally use. It’s ideal for people familiar with meat cuts and products. Plastic vacuum wrap seals the meat in clear plastic bags enabling the consumer to see the actual cut prior to selecting it. This method is normally used for retail sales in urban centres. Either method is satisfactory for preserving the meat, but the plastic vaccum system is more expensive.
