What is the difference between ” curdling & cougulation of milk”?
Curds is a dairy product obtained by curdling (coagulating) milk Etymology: Latin coagulatus, past participle of coagulare to curdle, from coagulum curdling agent, from cogere to drive togethe The first is Wikipedia definition of curd. The second is the etymology of Coagulation according to Merriam Webster Online Dictionary. In both curdling and coagulation are used synonymously. Hence, I conclude both are same. A possible difference may be in the case of milk, Coagulation maybe by chemical action and the formation of curd by bacteria. But the differentiating line is thin, yoghurt is often made by adding two types of bacteria but coagulation of milk in the stomach is by two enzymes.
