The grades roughly correspond to the various times within the season when the syrups are produced. The lightest syrups are produced early in the season while the darker amber and grade B are made later in the season. A typical season yields 25-30% light syrups,10% amber and only 2% dark. Maple syrup in New Hampshire is sold in 4 grades: light amber, medium amber, dark amber, and grade B. My personal favorite is grade B which is the strongest and darkest table grade syrup. It has a stronger, more satisfying maple flavor and is awesome to cook with. The early season light syrups are much more delicate in flavor, a lot of people like it for candy and on pancakes and such. I do not find it as good as i prefer the stronger taste, but it is a matter of personal opinion. As the sap season progresses and the trees get closer to putting out their leaves, the syrup changes, it has less sugar as the season ends. So grade B will be a bit less sweet. If you want a compromise go with dark amber.
