The amount of disk space required will really depend upon how active your lists are. However, List Server for Domino requires a minimum of 2 MB for the List Server portion, and a minimum of 450 KB for each list. Both the list server database, and each list database can grow in size very quickly, especially if you have logging turned on. The lists and the list server also retain the messages sent, so if your lists are going to support attachments, you should also take that into consideration when budgeting disk space.
