What is the interaction between enzymes and minerals?
Many enzymes require at least one mineral co-factor for their full activity (magnesium is a co-factor for over 300 different enzymes). In the laboratory, if you want to take away the enzyme co-factor, you just add some EDTA, which will almost always bind more strongly to the divalent cation than the enzyme in question; no heat required. So, most enzymes and minerals exist as a coordinate complex, not a true organic mineral compound.
