What is the Salted Nut Roll nougat center?
The center portion of the Salted Nut Roll is considered to be a “cream”. Cream candies are essentially a combination of fondant (sugar, corn syrup, invertase and water), frappe (sugar, corn syrup, water and soy protein – a whipping agent), flavor and color. The fondant when cooked, cooled and beaten resembles a thick white paste and the frappe looks similar to that of marshmallow. If the fondant (with the color and flavor) was used alone, the result would be a rather dense product. Therefore, a lighter texture is obtained by the inclusion of “frappe”.
