What is the white discoloration sometimes seen on dark and milk chocolate?

The white discoloration is called “Chocolate Bloom.” Chocolate is a large crystalline structure. When chocolate gets a little too warm, it begins to soften, bringing the cocoa butter to the surface. When it gets firm again the delicate crystal structure may not find its original home causing the white marks to appear. It isn’t pretty, but it cannot hurt you and will still taste great. There is no health risk. It is not mold. It’s simply discolored chocolate.
