What is your favorite home-made, home prepared, quick, easy & healthy dinner for two?
Tell me what your favorite home-made dinner is, what the ingredients are, and recipes or directions on how to prepare it. I’m looking for quick, easy, healthy meals for two. Preferably meals that are easy to have ingredients on hand for any time. My favorite is pasta with basil. I mix some lemon juice (about 1/2 a lemon) a couple cloves of minced garlic, some fresh ground pepper and good olive oil (enough to moisten pasta). Pour that over some cooked pasta (any kind will work) and then add chopped fresh basil (the amount is up to you). I also like to add some toasted pine nuts (I buy a big bag at costco and keep it in my freezer) and some grated parmesan cheese. Some sauteed zuchinni and yellow squash would make a great side dish. I also like to have garlic bread with this meal.
