I find that the French don’t eat beef as much as Americans do. Their diets tend to center on duck, fish and lamb. Lots of salmon and other fish as well. One of my absolute favorite things to eat while in France is a Croque Monsieur or a Croque Madame. It is the french version of a grilled cheese …however a very fancy version that calls for a white sauce and some browning under a broiler. The Croque Madame differs in that you add a fried egg on top of the whole thing. They truly are divine… and every bistro and cafe has one on the menu.
