If you are reffering to the Andoid application, it is written in Java, like all the other Android apps. As for other Evernote editions (for PC/mac/linux/whatever) they are most likely also written in Java, as the language is platform independent, and can run on pretty much any device that supports the Java Virtual Machine (JVM).
