What questions might the butcher ask?
Typically, he will ask whether you want filets and strips or t-bones (if ordering a whole carcass, you can have half and half); what kind and size of roasts; size of packages of ground beef; how much stew meat; how thick do you want your steaks; do you want the variety cuts (liver, tongue, heart, suet (kidney fat), oxtail, kidneys), do you want round steak or cube steaks and do you want them mechanically tenderised. These are just some sample questions, if you have something special in mind, be sure to ask.
