Identifying meat’s provenance is more often than not an exercise in exclusion rather than inclusion. No slab of muscle will tell you that it’s “raised in inhumane boxes”, but the absence of, for example, a sticker telling you that it is grass fed might suggest that it wasn’t outside grazing much (grass feeding is a selling point, sellers wouldn’t omit it). To ensure you get good meat, from a good ranch, grown under good circumstances, become friends with a butcher. Butchers can see the subtle and not-so-subtle differences. I am sure there are hundreds of independent butcheries and meat stores in the greater Miami area, you only need one. Those men and women are artisans and love to talk about their work and product. Animal Feeding Operations (AFOs) are defined by the Environmental Protection Agency (EPA) as animals which are congregated for at least 45 days a year with no grass or other vegetation in a small land area. Confined Animal Feeding Operations (CAFOs) make up about 15% of the AFOs and are similarly defined but with specific confinement area sizes elaborated-on in this EPA PDF file http://www.epa.gov/npdes/pubs/se… Both these AFOs and CAFOs congregate animals together with their feed, manure, urine and dead animals. Because of these living conditions the animals must be fed large doses of antibiotics to prevent the diseases, spread by the filth they wallow in, from killing them. The only meat I trust is organic meat because it is certified as being antibiotic-free, and AFO-CAFO meats must contain traces of the antibiotics fed to them. I also buy meat in Farmer’s markets that are from local farms which graze their animals. Other than that, I don’t know a sure way to know unless your meat
