What types of olive trees are used to produce olive oil?
The type of tree used to produce oil varies by geographic region. For example, in the north of Italy the Casaliva tree or the Taggiasca tree is usually cultivated. In central Italy, the Frantoio variety and the Leccino tree, the original tree of Tuscany are very prevalent because they hold up well in cold weather. In southern Italy, especially in Puglia and Molise, the Coratina variety is the most popular while in other southern regions the Orgliarola variety is cultivated. In Sicily, the Biancolilla tree is cultivated.
