Whats a fresh, tasty, and a little different chicken salad recipe?
I made this for a family that I am a private chef for, and they LOVED it…… Curried Chicken Salad with Cashews and Dried Cranberries: To your favorite “basic chicken salad recipe” (chopped chicken, mayo, onion, celery, etc) Add to that mixture: 1/2 cup honey roasted cashews 1 Tablespoon Mild Curry Powder 1/3 cup dried cranberries (think: Craisins) Mix all together, and refrigerate for at LEAST 1-2 hours, to let the flavors meld together) In a 2 large salad bowls, add your choice of mixed greens, and serve the chicken salad on top of the greens…. See how easy?? BTW, the Curried Chicken Salad can be made up to 2 days in advance, covered in a food storage container and refrigerated. You can also make great pita (the pocket bread) sandwiches with the Chicken Salad alone, and the pocket bread keeps the mixture from falling out of the bread….Enjoy!!
