Whats a recipe for good chicken salad?
2 chicken breasts roasted or broiled , cubed 1 stalk celery diced 1/2 small onion diced 2 tablespoons mayo (add more if you like it ‘creamier’) 1 teaspoon mustard (I like deli style but any style is fine) 1/2 tsp of vinegar or Worcestershire sauce (it adds acidity – I prefer the worcestershire sauce but use vinegar if I have to) Dash of celery seed salt and pepper to taste Chill cooked chicken to make cubing easy. Mix together all other ingredients, toss with chicken, and chill for minimum 1 hour but is even better overnight. Readjust salt and pepper before serving. Some add ins based on your personal preferance: diced apples, sliced grapes, nuts, raisens, or dash of old bay seasoning. I personally don’t add any of these but have seen it done.
