Whats the best rice pudding recipe?
I like this one. I’ve never come across rice pudding with lemon in it. RISGROT, or Norwegian rice pudding. Remember to keep the heat low, at the simmer point, otherwise this can burn easily. Cook until water is absorbed: 1.5 cups rice 1/2 cup butter 1/2 litre water Add 2 litres milk(whole milk is best Cook for 1/2 hour, stirring well Add another 1/2 litre of milk 1 tsp salt 5 tablespoons sugar Cook well Add raisins to taste Whip one egg with a,little sugar and a little milk, add to pudding and cook briefly to cook egg Add vanilla extract if wanted If I wanted lemon flavour in this, I’d add some lemon zest at the end Your grandmother may be making her rice pudding without an actual recipe, as experienced cooks often do with things like this where exact measurements aren’t important, but maybe you can ask her if you can be there next time she makes it.
