Hi, Basically it depends on what you are trying to do. If the fieldstone is in good shape but the mortar is bad you can just re-mortar it, as in tuck pointing. This leaves the fieldstone able to be seen, and you can give it a clear coat of polyurethane so it doesn’t create dust. If you want to coat the whole wall, you can use a plaster/cement mix. Plaster is Structolite or Gypsolite basecoat plaster, available at building material stores. You can apply it alone or with some cement in the mix, the cement being Holcim Type S Portland cement available at Home Depot. The cement makes the plaster harden more quickly, so you can leave it out if you want more working time. A scoop per bucket will do. You can just use any portland cement depending on what you can find. This gives a nice sand finish, it should be troweled on and then smoothed with a float, which is a trowel that has that green scrubby stuff on it. Sand finish is a popular look out here in Colorado.
