What’s the best way to peel hard-cooked eggs?
Crack the egg gently all over. Roll the egg between your hands to loosen the shell. Peel by starting at the large end. Dipping the egg in water may help to get the shell off. Eggs which have been stored for a week to 10 days before cooking are usually easier to peel than fresh eggs. Cooling eggs quickly and thoroughly makes it easier to peel. Q: Are brown eggs healthier? A: No. Shell color is determined by the breed of hen and is not related to quality, nutrients, flavor or cooking characteristics. Since brown egg layers are slightly larger birds and require more food, brown eggs are usually more expensive than white. — Susan Krumm is an Extension agent in family and consumer sciences with K-State Research and Extension-Douglas County, 2110 Harper St. She can be reached at 843-7058.
