Cask beer (or Real Ale) contains yeast which continues to ferment slowly in the cask producing natural carbon dioxide. Finings are added to the cask to help sediment the yeast and before being served the cask has to be allowed to settle to clarify the beer. It is served through a hand pump. Keg beer is filtered, carbonated or nitrogenated and pasteurised before being filled into the kegs and is ready to drink as soon as it is packaged.
