Whats the Difference Between Chicken Stock and Chicken Broth?
What’s the difference between chicken stock and broth? A good question since the two words seem to be interchangeable. However, there is a difference and I’ll tell you about it here. The basic difference between chicken stock and broth comes from its characteristics. A chicken broth will actually react in a different way when used for de-glazing a sauté pan than it will if you were using a stock. And here’s the reason: stock is often used as an alternative to cream or butter when binding up pan drippings.
stock and broth are kind of the same thing. stock is homemade and you can buy broth in a can. If you don’t have time to make stock (you can get recipes on line) you can use canned chicken broth (Campbell’s make a good broth). Chicken stock tends to be made more form bony parts, Whereas chicken broth is made more out of meat. Chicken stock tends to have a fuller richer flavor due to the gelatin released by long-simmering bones. But you can use ether or, chicken broth is a big time saver. If your making chicken soup you want to cook your chicken in water and use that as your stock. If you need more chicken flavor added to what your making you can get chicken base, it comes as a powder or in a cube (they are both vary salty so add salt last if more is needed).
