Whats the difference between color and value, technically speaking?

As an artist myself, and an art student I’ve come to understand the term “value” as being the lightness or darkness of a certain color or object within a piece. A face, for example has a lot of value, because when you look at it you see so many variations of light and dark. Value often is conveyed as shading or shadows/lightness. Color on the other hand, is the actual hue or saturation of a piece.
