Whats the difference between Genoa and Hard Salami?
Genoa Salami tends to have more fat than Hard Salami and very rarely has any added smoke flavor added. Hard Salami is typically German in origin and is harder and dryer than Genoa. Hard Salami usually has smoke flavor added or is smoked. Typically Genoa is softer and milder than Hard Salami, although Genoa Salami can be rendered hard by drying it is typically sold as it was produced, soft, mildly seasoned and in the higher end styles sold in a natural casing.
