I am no expert in this but just for a discussion. The default UPN suffix for a user account is the DNS name of the Active Directory domain where the user account is located. In such case I don’t think you can change it from the schema. You can change it, however, if you rename the domain but it’s only possible if the domain functional level is Windows Server 2003. Anyway, I don’t think renaming the domain is what you want. If your purpose is to provide a shorter UPN suffix for users, I think adding an additional UPN would be good enough.
