Eggs florentine is definitely my favorite brunch item. Nothing hits the spot quite like toasted, halved biscuits topped with fresh spinach and poached eggs, then doused with a buttery Hollandaise sauce. A side of rosemary potatoes or potatoes O’Brien goes perfectly with this dish. As someone who doesn’t eat pork, yet loves Hollandaise sauce and the concept of the eggs benedict, I sure do love and appreciate eggs florentine.
