I am a former chef from Canada and by mine in the Asian district here in Toronto Canada, they sell both the sulphate and carbonate for solidifying it and a sterate to preserve it, so check with the local Chinese/Japanese shops, I can also buy my soya beans in bulk and have a milk attachment with my juicer, otherwise soak the raw beans and process them in a blender or food processor and cook to extract the milk and solids. You may be able to get it sent by post if it is not available directly in your area.
