Which types of cheeses are made with rennet?
Most are, unless they are specifically labeled as “made with vegetarian rennet”, which comes from a plant. Cabot brand cheeses are made with veggie rennet. Most of the softer cheeses, such as cottage cheese and cream cheese are made without animal rennet, but you have to read labels-rennet is often listed simply as “enzymes”. I make homemade cheese with either lemon juice, thermophilic, mesophelic, or vegetarian rennet-all of them have a lovely texture and flavor (I use raw, organic milk from my own cows) Any processed cheese “food” is made of chemicals similar to plastic and animal rennet.
