Which types of potatoes have the least amount of carbohydrates?
I don’t think it makes a difference whether a “normal” potato is waxy or floury; they still have the same level of carbohydrate. What does make a difference is how you cook the potatoes; if you look up the Glycaemic Index on google you will see that the GI of Jacket Potatoes is much higher than boiled; the cooking process releases starches and converts them to sugars, i.e. carbs, in a completely different way. You get slower release of carbs from boiled; with jacket you get a fast, non-lasting release. As others have said here though, the potato with the lowest GI rating is sweet potato.
