The plastic disposable bags used to be stiff and slick when they first started using them and they would often split if you applied too much pressure to them. The canvas bags were a lot easier to use because they didn’t slip in your hands and they were easier to control how the icing was squeezed out. The new disposable bags are thinner, stronger and not as slick especially if you can find the ones called sure grip. I work in a bakery and that is all we use now. If you are going to be using them for several days or within a week or two, you can just leave the plastic coupler in the end and leave them filled with your colored icing so you don’t have to mix it up again. You can see at a glance, with the disposables, what color of icing is in the bag. The canvas bags work well but you have to wash them at the end of the day or they will absorb the icing.
