Who tended the garden through the growing season?
This is a project we wanted to take on, but we don’t have the full-time staff to dedicate to the garden. Silvie Jackson, the Lead Sous Chef, myself, and a couple of volunteers watered the plants every day. During the summer, we had lots of rain, and we still go out and pick herbs. So it was mainly culinary staff able to participate in this garden. It’s been more of an experiment at this time. What kinds of plants did you grow? The majority are herbs, like rosemary, sage, five kinds of basil; tomatoes, eggplant, lots of peppers (including habaneras) and beans. We didn’t use any pesticides. Tomorrow, in Part 2, we’ll finish the interview with Raquel and learn more about their great garden experiment, well on its way to becoming an annual event!
