Why are some LION coffee bags hard like a brick and some are fluffy with air?

We vacuum pack our Lion Coffees in a plastic coated multi-ply aluminum bag which has a freshness valve which allows natural gases that come off of freshly roasted coffee to escape. This valve is one way; it won’t allow any air back into the bag, preserving the freshness of the coffee. Generally, the brick hard bags may become fluffy in a few days after packaging. Sometimes in air travel, the differential in pressure in the unpressurized cargo cabin will literally suck the gasses out of the bag, making the bag brick hard again. The hardness or fluffiness of the bag is not an indication of its freshness or age. Our products have a one year shelf life.
