The main reason for the difference is thickness and consistency of the batter and certain tastes can be changed simply by minor details Like for instance if you were to add Blueberries you would decrease the amount of sugar required for the recipe And I also believe that the variances in batter also could contribute to the amount of food actually made Say for instance you might make and eat a large stack of pancakes but waffles are more filling in my personal opinion and you eat less of the latter
