Why are there ice crystals on ice cream and are they harmful to eat?
The crystals that develop on the top of ice-cream during the process called granulation. This is when the ice cream turns from it’s liquid state to a solid state. If the liquid ice-cream, or even solid is stored in a facility that is too cold for the ice-cream it can produce ice crystals which is frozen water on top of the ice cream. They’re not harmful to eat.
