Why aren Buckwheat Pancakes and Waffles more popular?
As a guy from the South, I can say that I wish they were more popular. Aside from the fact that real buckwheat is slightly more expensive, I have another idea. My guess is that nowadays, the American pallette has just become too homogoneous, too….scared. We (and I mean the population in general) have lost our sense of adventure. We don’t wanna take the risk on something strange that could taste weird, when we know that something normal tastes okay enough. We have become comfortably numb, ready to accept the ordinary, instead of expanding our culinary horizons to far coasts, or looking inland to see where this land actually started. We look for the cheap, the convenient, and the familiar. And its a shame.
