In 2004, when we switched our oil, the evidence against trans fats in our diet was just starting to surface, but was irrefutable. Scientific evidence has shown that dietary trans fats raise “bad” cholesterol (LDL) levels and lower “good” cholesterol (HDL) levels and as a result, increases the risk of heart disease and stroke. Thus, it is important from an overall healthy eating perspective, to reduce both the trans and saturated fat levels of foods in our diets.
