DEVONthink, TextEdit and many other Mac OS X applications use Unicode, whereas applications based on the older Carbon architecture such as Microsoft Office use plain ASCII. When you copy Unicode text to a non-Unicode aware application, you get garbage. For rich text, Word recognizes the Unicode encoding and displays the text correctly.
