Why do all the buildings in the distillery complex have pagoda roofs when they are not all kilns?

Primarily because they give the architecture of the buildings a typical Distillery ‘look’ but in the still house they also act as fans to disperse any excess Co2 created by the fermentation process in the washbacks.
